Today is the official day dedicated to celebrating our Mother(s). We want to wish all of our Plant Chic Moms an extra special Mother's Day this year and we hope you are able to be together.
So much has transpired since we were on lockdown last year and it's nice to be getting back to some sense of "normal". [I'm not even sure what that means...]

What defines a thriving life?
Does it mean you have to be successful in your career? Is “having it all figured out” a good sign of a thriving life? Do you need to be happy all the time to thrive?
Well, there isn’t an exact answer to those questions.
In general, a thriving life involves a sense of development. That involves acknowledging your strengths and weaknesses and knowing how to manage yourself no matter what situation you're in.
To thrive,
You don't have to be a successful entrepreneur.
You don't need large amounts of money or resources.
You don't have to figure it all out.

Holy yum! These breakfast brownies are super nourishing and healing and they are a perfect food to feed your health-ful gut microbiome. And here's an extra bonus: they're whole food and they taste delish! These do not have any processed ingredients or refined sugar. #winning
1 can black beans (or ~ 12 oz of black beans if you make them from dried black beans)
1/2 cup oat flour (I grind old fashioned oats in a coffee blender for my oat flour)
2 heaping Tbsp cacao powder
2 scoops Ultimate Shrooms
1 teas baking soda
4+ blended dates (dates + water) - add more or less for your desired sweetness
1/4 cup peanut butter (or nut butter of choice)
1 teas vanilla
1 1/2 cups chopped fruit of choice (I used mangoes in this recipe)
1. Preheat oven to 350 degrees.
2. Add dry ingredients to bowl. Mix well.
3. Add the rest of the ingredients, except the fruit. Stir well, but make sure you don't over stir.
4. Add the fruit and stir to combine.

Food waste is a big problem. In the US, 63 million tons of food are wasted every year. Food waste accounts for 21 % of all fresh water in the US and takes up 21% of the landfill. It releases a methane gas that is 28 times more potent than carbon dioxide and it exhausts our natural resources like water, gas, energy, land, labor, and fertilizers to produce it. We need to be more conscious of what food we buy and how we use it before it goes bad.

Our Clubhouse room on Friday was lit!! We veganized some recipes, answered questions, and met a lot of amazing peeps! If you're on Clubhouse, make sure you join our Club, Plant Chics!
We ended our Room with a challenge to create a recipe using three ingredients:
White beans
Kalamata olives
Greens
We could take this any direction, and someone mentioned pasta, so I decided to make this into a pasta Alfredo. And it does not disappoint.
This creamy pasta Alfredo is really good. The balsamic veggies that I paired it with was the perfect combination of creamy umami richness with a hint of sweet from the balsamic. It was a delicious party in my mouth!
Ingredients
1/2 c cashews (soaked in water for at least 3 hours; discard the water)
1/2 c white beans
3+ cloves of garlic (adjust to your tastebuds)
1/4 t salt
1/4 t black pepper
1/2 t oregano
1/4 c kalamata olives
4 c greens (I used spinach and protein greens)
3 c mushrooms (I used portobello)
Pasta of your choice (I used brown rice pasta)
