I met Holly, the creator of Yoga is Vegan, on Clubhouse recently. She hosts a super cool room every Saturday at noon ET called yoga is vegan. It was in her room that we connected and she found out that yoga is part of my story that led me back to a plant based diet. ‍

Dreams, doubts, and discomforts

 

Dr. Madeline Hardacre accomplished a dream: she ran an ultramarathon. I was so amazed with this feat that I had to get her on a zoom call to discuss her mindset and how she accomplished something that is sooooo mentally and physically challenging.

Dr. Madeline joyfully shares her wisdom and grit on how she realized her dream. She had several road blocks but she did not let them hold her back. Nine years in the making, she ran and completed her first ultramarathon (that's FIFTY MILES) on Saturday, May 22, 2021.

Blue Poop Challenge

 

A paper was recently published in BMJ Gut about blue poo and the impact of gut transit time on the gut microbiome

In the paper the Zoe team, in collaboration with leading scientists, gave blue muffins (they're more like cupcakes!) to thousands of people and they discovered that gut transit time - the time it takes for food to travel through your GI tract - can say a lot about a person's gut microbiome.

The best part? You can take the #bluepoopchallenge too!

Ingredients

1 3/4 cups plain, all-purpose flour

1 Tbsp baking powder

1 cup granulated sugar

1/2 cup vegetable oil

1 cup water

1 tsp vanilla extract

1 tsp Royal blue food dye

Instructions

  1. Preheat oven to 325F.
  2. Combine flour, baking powder and sugar in a large bowl and stir to mix.
  3. In a jug, combine sunflower oil, water and vanilla extract.
  4. Make a well in the center of the flour mixture and pour in wet ingredients.

Mexican Lasagna

 
Y'all have been asking when we will be doing our live cooking shows again. Well guess what?!! We will be going LIVE on JaneUnChained News (on Facebook).
 
It's happening Wednesday, May 19th at 12:30 PM PT (that's 2:30 PM CT/3:30 PM ET).
 
We will be cooking up Marzia's infamous Mexican lasagna, that she adapted from the Vegan 8 Cookbook. It's a one pot meal that we make in the Instant Pot. If you want to cook along with us, scroll on down for the ingredients and let's get to cooking!
 
Ingredients
2 medium sweet potatoes, cubed, cooked (peeled is optional)
2 cans Hatch red chili (you can also use green)
Pico - diced tomatoes, onions, cilantro, jalapeno to taste
1 cup fire roasted corn
1 cup black beans
1 can jackfruit, shredded
6 - 8 Organic corn tortillas 
 
Instructions
  1.  Cook sweet potatoes (or you can purchase frozen precooked cubed sweet potatoes).

Happy Mother's Day!

Today is the official day dedicated to celebrating our Mother(s).  We want to wish all of our Plant Chic Moms an extra special Mother's Day this year and we hope you are able to be together. 

So much has transpired since we were on lockdown last year and it's nice to be getting back to some sense of "normal". [I'm not even sure what that means...]

We want to wish our small team a super fabulous Mother's Day. Without our Plant Chics Tribe moderator, Tiffany Wilkerson, and our Influencer Relations, Monique Gutierrez, we wouldn't be where we are today.
