Un-Tuna Sandwich

Enjoy this vegan un-tuna fish sandwich made with jackfruit. Jackfruit is very versatile and has the texture of a "tuna' fish sandwich from childhood. Whether you are trying to limit seafood in your diet or you don't like fish at all, this sandwich is a great recipe when hunger strikes.

You can watch my YouTube video to see how simple it is to make. 

Un-Tuna Ingredients

1 can jackfruit, rinse and shred

1/3 cup tomatoes, chopped

1/3 cup onions, chopped

2 Tbsp vegan mayo

1/4 cup pickle relish (or you can use celery or olives instead)

Salt and pepper (optional)


  1. Put all ingredients in a bowl. Stir well. Scoop desired amount onto sourdough bread. Enjoy!

I love eating my un-tuna on sourdough bread, but you can choose your favorite whole grain bread.

Peaches and 'cream


This is the Plant Chics version of peaches and cream which means it is 100% delicious and 100% nutritious! We wanted to get this out to you today, so you can make it for National Peach Day, which happens to be tomorrow. 

You're welcome.

Peaches & 'Cream

  1. Cut peach in half and remove the pit.
  2. Place peach on aluminum foil and sprinkle with cinnamon and a little maple syrup.
  3. Seal the peach in aluminum foil and Air Fry at 350F for 15 minutes.
  4. While the peach is cooking, prepare your nice cream: today's nice cream was ~1.5 bananas (frozen) and room temp mango (1/2). I blended on "ice cream" in my Blendtec
  5. When the peach is done, remove from Air Fryer and  place in bowl. (Your kitchen is going to smell so good!!!), spoon some nice cream on top of warm peach and add other toppings (I added vegan chocolate chips; you can add granola, shredded coconut....the sky's the limit!).
  6. Enjoy!

Here are the simple and fun rules:

  2. Record the different plants you consume with each meal. Only track the plant one time (if you eat spinach several times during the week, you only count it once on the tracker). Sunday's New Moon

Ok, we're taking a little detour from our normally scheduled Plant Chics programs for some woo-woo. Except it isn't woo-woo, it's actually quite fascinating!!

Tomorrow we will be experiencing a New Moon.

New Moons are the time to set intentions and manifest over them for the next two weeks.

You should set your intentions as soon as, or right after the time of the New Moon where you live. Check timeanddate.com for the moon schedule where you live. This was super cool to learn for me - I had no idea New Moons happened at different times based on where you live, and they can happen during the day! For example, the New Moon is expressing Herself in Miami Sunday at 9:50 AM. #themoreyouknow

You should also create a New Moon Manifesting routine. Here is an example of a routine that was shared with me:

Breath work - this can be as short or as long as you'd like it to be.

Movement - this can be some sun salutations, dancing to your favorite music, walking/jogging outside in the fresh air....

Eating healthy and taking care of your body is an important component of recovery. It may not be the first thing you think about doing when you embark on your recovery journey, but recovery is what led me back to living a healthy lifestyle and continuing my lifestyle medicine journey.

There is so much misinformation about nutrition out there and it can be so confusing! So what does "eating healthy" mean? The short answer is: it varies. It varies based on your goals, past medical history, family history, addictions, and so much more.

What can be good (healthful) for one person in recovery may not be the best for another person in recovery. 

One thing that is consistent is the health of our gut microbiome. Our gut is considered our second brain, and we've got to nourish to flourish! It's important to note that most all dietary preferences can work on improving your gut microbiome.
