New Month, New Goals! September 2021 Edition

Ok, this blog is being posted a little late, but like the saying goes, better late than never, right?!!

And there's no time like the present, so it's time for me to proclaim my goals for September! I've got 4 main goals I want to work with this month, so let's get this party started.

Circadian-ish living.

I want my eating window to be 8 AM - 8 PM, which means I will be fasting for at least 12 hours every day. This may seem like nothing, but I always seem to snack on something around 9 or 9:30 PM.   It's time for me to kick that habit.

I also want to get outside first thing in the morning and get some morning sun on my body to kick start my hormones and wake my body up at the cellular level.

Move my body every day.

I've been working out most every day for the past little while. It feels good. I'd like more of my workouts to be done outside, so I will put outdoor workouts into my weekly calendar. Mornings are the best time for me to workout, but literally yesterday was crazy and...

14 Sober - and Fun - Activities to do in Maui

Maui is one of my favorite islands to visit in Hawaii, and there are so many fabulous activities that you can do sober! So here are some of my absolute favorites, in no particular order.

Sober Fun in Maui

  1. Watch the sunrise over Haleakala. I swear it looks like pictures I've seen of the Moon up here! You have to get up super early to do this. Ask the concierge (or check on your smartphone) the time of the sunrise and how long it will take to get to Haleakala from where you are staying. You will need to take warm clothing (we took blankets and comforters from our hotel room) for this adventure because it's cold up there! I recommend doing this toward the beginning of your trip, when you're still adjusting to the time change because you will have an early wake-up call. I think we had to be up at 2 or 3 AM local. Reservations are now required, so make sure to book this soon too!

Un-Tuna Sandwich

Enjoy this vegan un-tuna fish sandwich made with jackfruit. Jackfruit is very versatile and has the texture of a "tuna' fish sandwich from childhood. Whether you are trying to limit seafood in your diet or you don't like fish at all, this sandwich is a great recipe when hunger strikes.

You can watch my YouTube video to see how simple it is to make. 

Un-Tuna Ingredients

1 can jackfruit, rinse and shred

1/3 cup tomatoes, chopped

1/3 cup onions, chopped

2 Tbsp vegan mayo

1/4 cup pickle relish (or you can use celery or olives instead)

Salt and pepper (optional)

Instructions

  1. Put all ingredients in a bowl. Stir well. Scoop desired amount onto sourdough bread. Enjoy!

I love eating my un-tuna on sourdough bread, but you can choose your favorite whole grain bread.

Peaches and 'cream

 

This is the Plant Chics version of peaches and cream which means it is 100% delicious and 100% nutritious! We wanted to get this out to you today, so you can make it for National Peach Day, which happens to be tomorrow. 

You're welcome.

Peaches & 'Cream

  1. Cut peach in half and remove the pit.
  2. Place peach on aluminum foil and sprinkle with cinnamon and a little maple syrup.
  3. Seal the peach in aluminum foil and Air Fry at 350F for 15 minutes.
  4. While the peach is cooking, prepare your nice cream: today's nice cream was ~1.5 bananas (frozen) and room temp mango (1/2). I blended on "ice cream" in my Blendtec
  5. When the peach is done, remove from Air Fryer and  place in bowl. (Your kitchen is going to smell so good!!!), spoon some nice cream on top of warm peach and add other toppings (I added vegan chocolate chips; you can add granola, shredded coconut....the sky's the limit!).
  6. Enjoy!

We are going to count the number of plants we eat over the next 7 days! It's super simple and we created our Plant Tracker for you to download to log your plants!

Here are the simple and fun rules:

  1. Click here to get the Plant Tracker. Encourage your family to participate with you!
  2. Record the different plants you consume with each meal. Only track the plant one time (if you eat spinach several times during the week, you only count it once on the tracker). You will see that all whole foods count: veggies, fruits, nuts & seeds, beans & legumes, whole grains, fresh herbs & spices (not the powdered ones that have been processed though).
