In honor of #earthday I am sharing a zero-waste food recipe with you.

But first, let’s talk food waste.

Food waste is a big problem. In the US, 63 million tons of food are wasted every year. Food waste accounts for 21 % of all fresh water in the US and takes up 21% of the landfill. It releases a methane gas that is 28 times more potent than carbon dioxide and it exhausts our natural resources like water, gas, energy, land, labor, and fertilizers to produce it. We need to be more conscious of what food we buy and how we use it before it goes bad.

Carrot Cake Energy Bites

1 cup carrots
½ cup walnuts or pecans
½ cup shredded coconut
1 cup rolled or quick oats
¼ cup cashew butter (Or nut butter of choice)
5 dates
1 teaspoon cinnamon
1 ½ teaspoon nutmeg
½ cup shredded coconut for rolling
1. In the NutraMilk, add 1 cup of carrots and process. Transfer to a bowl.
2. Add all of the other ingredients to NutraMilk and process until smooth.
3. Fold the carrots in and make sure it is mixed well.
4. Roll into bite size balls.
5. Roll into shredded coconut.
You can eat right away or put it in fridge/freezer for later.
